- 175g golden syrup
- 175g brown sugar
- 350g porridge oats
- 1/2 lemon finely grated zest
- A pinch of ground ginger
Preparation

-
Melt the butter in a medium pan over a low heat.
-
Dip a brush in butter and line the baking tray (can get a bit sticky at the end otherwise).

Add the golden syrup and sugar to the butter and heat gently.
-
Once the sugar is dissolved and the butter melted, remove the pan from the heat and stir in the porridge oats, lemon zest and ginger.

I also added some lemon juice to the mixture using the same 1/2 lemon used for the zest, continue stirring till blended.
-
Pack a mixture into the baking tray and squash down evenly.
-
Bake in the oven for 40 minutes.
-
Once cooked, remove from the oven, leave to cool for 15 minutes, then turn out onto a chopping board and cut into squares.
-
